摘要讨论了啤酒酵母细胞中的多种酶系,指出了这些酶的性质、酶活性及其在啤酒生产各工艺阶段的作用。The varieties of enzymes of yeast,their characteristics,activities and their effections during brewing were discussed in this paper.
