摘要
铜(Ⅱ)及其氨基酸和二肽络合物催化Vc有氧氧化反应级数对于催化剂及Vc均显一级;铜(Ⅱ)蛋白质无催化活性。铜(Ⅱ)及其氨基酸络合物催化反应过程中明显有活性氧自由基产生;而铜(Ⅱ)二肽及蛋白质络合物催化反应过程中不产生活性氧自由基。抗坏血酸氧化酶催化Vc有氧氧化能力很强,但体系中没有检测到活性氧自由基。
The reaction order for Cu(Ⅱ), Cu(Ⅱ)-amino acid and Cu(Ⅱ)-dipeptide complexes catalyzed reactions are first order respect to both Vc and catalysts; Cu(Ⅱ)-proteins didn't catalyze the reaction. There is apparently raactive oxygen produced during Cu(Ⅱ) and Cu(Ⅱ)-amino acids catalyzed reactions; Cu(Ⅱ)-dipeptides catalyzed reactions didn't produce reactive oxygen. Ascorbate oxydase catalyzed Vc oxidation rate is very fast, but it didn't produce reactive oxygen during the catalyzed reactions.
