摘要
目的 了解某高校大学生的膳食结构与铁营养状况。方法 采用 2 4h膳食记录法及称重法进行膳食调查 ,并进行常规营养缺乏病的实验室检查。结果 蛋白质摄入量男、女生分别占供给量标准 (RDA)的 85 3%和 72 9% ,优质蛋白质不足 ;抗坏血酸摄入量男、女生分别占RDA的 5 9 3%和 6 5 3% ;铁摄入量男、女生分别占RDA的 133%和 10 2 %。缺铁性贫血 (IDA )的患病率男、女生分别为 15 6 1%和2 9 5 4%。 4h负荷尿试验 ,维生素C不足率男、女生分别为30 %和 15 %。结论 该校大学生膳食中动物性食品及蔬菜、水果类食品摄入量偏低。尽管膳食中铁摄入量超过RDA ,但由于铁利用率低 ,同时优质蛋白质及维生素C摄入量低 ,造成机体铁营养状况较差。应努力改善膳食结构 。
Objective To investigate the dietary patterns and the nutritional status of iron in college students Methods A 24 h dietary record method and weight method were used, and some routine tests of deficiencies were performed Results The average consumption of protein constituted 85 3% and 72 9% of their recommended dietary allowance(RDA) in male and in female respectively VitC constituted 59 3% (male) and 65 3% (female) of their RDA Iron constituted 133% (male) and 102% (female) of their RDA The prevalence rates of iron deficiency anemial(IDA) were 15 61% (male) and 29 54%(female) respectively The result of 4 h urine loading test indicated 30% of males and 15% of females suffered from Vit C deficiency Conclusion The consumption of animal food, vegetable, fruit were lower in college students Iron nutritional status was poor due to the lower bioavailability, an short supply of high quality protein and Vit C although there was excess iron consumption It is essential to modulate dietary patterns for college students in order to attain reasonable nutrition and promote health
