摘要
以脱氧雪腐镰刀菌烯醇平均含量为3 223.6μg/kg的超标小麦为原料,经加工处理,制成全麦粉、麸皮、全麦粉干面筋、小麦粉干面筋,分别测定其脱氧雪腐镰刀菌烯醇含量,进行对比分析后发现:麸皮中脱氧雪腐镰刀菌烯醇的含量达到9 431.2μg/kg,超标8.4倍,极显著高于全麦粉;全麦粉干面筋中脱氧雪腐镰刀菌烯醇的含量极显著降至1 159.5μg/kg;在用分离麸皮后的小麦粉制作成的干面筋中,脱氧雪腐镰刀菌烯醇的含量极显著降至818.4μg/kg,符合国家标准.试验结果表明,利用脱氧雪腐镰刀菌烯醇超标的小麦,采取适当的生产设备和工艺,生产的谷朊粉中脱氧雪腐镰刀菌烯醇含量能够达到国家标准.
Wheat products containing over-standard deoxynivalenol with the average content of 3 223.6μg/kg were processed to whole wheat flour, wheat bran, whole wheat flour dry gluten and wheat flour dry gluten, then we respectively determined the content of deoxynivalenol in the processed wheat products. The determination results showed that the wheat bran contained deoxynivalenol 9 431.2 μg/kg, which exceeded the standard by 8.4 times and was extremely higher than that of the whole wheat flour; the content of deoxynivalenol in the whole wheat flour dry gluten was remarkably reduced to 1 159.5μg/kg; and the content of deoxynivalenol in the dry gluten made of the wheat flour without bran was remarkably reduced to 818.4 μg/kg and conformed to the national standard. The test results showed that the wheat products containing over-standard deoxynivalenol could be processed to wheat gluten, in which the content of deoxynivalenol could conform to the national standard, by using proper equipment and process.
