摘要
:叙述了在油脂脱臭过程中油中顺式脂肪酸转化成反式脂肪酸(多不饱和程度越高,生成反式酸的倾向就越大)以及油中维生素E的损失问题。另外,还提出了用新式填料式脱臭塔替代目前常用的盘式脱臭塔问题,因为前者的水蒸汽耗用量少,反式脂肪酸生成量也少,并生育酚的保留量却较多,其优越性是很明显的。
This paper describes the formation of trans fatty acids from cis fatty acids (the more polyunsaturated it has,the more trans fatty acids will be formed),and the tocopherol loss problems during the oil deodorization process.In addition,a new packed deodorization column has been discussed to replace the tray type deodorizer for its less amount of steam consumption,less trans fatty acids formation and more tocopherols be reserved.So,the packed deodorization column's advantages are obvious.
