摘要
以冻藏黄花鱼为研究对象,考察了微波功率、挂冰厚度及鱼的层厚等条件对微波解冻过程的影响。结果表明:功率越大,解冻速度越快,同时解冻有效时间段(解冻有效时间段指-5~4℃)越短;挂冰可以延长解冻有效时间段,随着挂冰厚度的增加,解冻有效时间段越长;随着冻鱼层次的增多,鱼体解冻过程中达到有效时间点所用时间越长,有效解冻时间段也越长。对于5层厚度的冻鱼(10cm以上),2450MHz的微波炉达不到很好的解冻效果。
The influence factors of the defrosting by using microwave, including microwave power, the thickness of ice on the yellow croaker which is cold frozen saved and the thickness of the yellow croaker were studied. The result indicate that the increasing microwave power will speed the defrosting, and the actual defrosting time period will become shorter at the same time(the actual defrosting time period is from -5-4 ℃); the ice on the yellow croaker will affect the actual time period of defrosting which will be prolonged with the increasing thickness on the yellow croaker; with the increasing layers of the freezing yellow croaker, the time need to defrosting the yellow croaker will take longer time, the actual defrosting time period will become longer. As to the freezing yellow croaker with the thickness of five layers(more than 10 cm), the microwave with 2450 MHz won't achieve a perfect defrostinq result.
