摘要
水果和蔬菜在贮藏中的呼吸作用与影响因素水果和蔬菜(下称果菜)经过包装、贮藏或运输后,仍应保持原有的色香味和营养价值。果菜收获后,仍是一个有生命的有机体,还会进行休眠、发芽以及水分蒸发、呼吸作用等复杂的生命活动。这些生命活动都与果菜的包装贮藏息息相关。
Based on the fact that fruit and vegetable in storage are still living organism,and their life action controls their storage,this article analyzed the life action in fruit and vegetable storage and its influencial factors, pointed out that life action most effecting packaged fruit and vegetable in storage is respiratory action, which is mainly controlled by storage temperature. Moreover,within a certain range,the lower the storage temperature is,the weaker the respiratory strength,and the longer the storage life will remain. For the purpose of controling storage temperature and keeping the original flavour of fruit and vegetable,this article analyzed and calculated heat balance in details,and deduced three formulas including safety storage check,the determination of safety storage time and the choice of packaging materials,put forward heat-seperating measures for packaged fruit and vegetable storage.
