摘要
畜产品是改善人类营养和生活水平的重要原料,畜产品加工是促进畜产品转化增值,保证质量安全,减少环境污染的重要环节。畜产品加工在中国发展60余年,将其成就加以总结,分析存在的问题;同时阐述了发达国家畜产品加工发展的经验及趋势,有利于更好地促进我国畜产品加工业可持续发展。在此基础上,提出我国今后畜产品加工需突破的关键科学与工程技术问题,对未来该领域的研究方向具有一定的指导意义,也期望能对相关领域研究者有所启发。
Animal products,which are one of the crucial raw materials,can improve human nutrition and living standards.Animal products processing plays an important role in promoting transformation and value-adding of the animal products,ensuring quality and safety,and reducing environmental pollution.In the past 60 years,animal products processing has made great progress in science and technology in China.To promote its further sustainable development,it is important to summarize the achievements,analyze the existing problems,and comparatively introduce the experience and development trend of the developed countries.The main breakthroughs of scientific and engineering technical problems are addressed in animal products processing field,which is of certain significance for the future direction in this field,expecting to inspire the illumination of researchers in the related fields.
