摘要
随着人们生活水平的提高,消费者对畜产品的要求也不断提高,猪肉品质的评定及其如何进行品质调控便成了当今畜牧领域研究的热点之一。文章对猪肉品质的评定指标及影响因素进行了综述。
With the development of the living standard of the people, the paid made more and more attention to the safe of animal production. So the research of pork quality evaluation and quality regulating became one of the focus in animal husbandry field. This paper reviewed the the evaluation indices and influencing factors of pork quality.
