摘要
为了进一步改善上部烟叶质量和优化密集烘烤工艺,通过变频器控制密集烤房循环风机转速,研究了密集烘烤定色和干筋期不同风机转速对上部烟叶外观质量、化学成分及协调性、致香物质含量和感官评吸质量的影响.结果表明,定色期和干筋期的风机转速对上部烟叶的外观质量和内在品质的形成有重要作用,适当降低风机转速能够明显提高上部烟叶的烘烤质量,其中以T3处理(干球温度42~47℃时风机转速为1 440 r.min-1,47~60℃时960 r.min-1,60~68℃时720 r.min-1)对烤后上部烟叶外观质量、化学成分协调性和感官评吸质量的改善效果较为突出,显著提高了大部分香气物质的含量,其烤后烟叶香韵好,香气量充足,香气质纯净,刺激性较小,浓度和劲头适中,杂气少,口感好,在一定程度上改善了上部叶的可用性.
To improve the quality of upper flue-cured tobacco leaves and optimize curing technology, effects of fan speed controlled by inverter during the leaf drying and stem drying stage of bulk curing on appearance quality, chemical components and their harmony, content of aroma components, and the smoking quality of upper flue-cured tobacco were studied. The results showed that the fan speed of bulk curing had an important influence on the formation of appearance quality and internal quality of upper leaves. Properly reducing fan speed could greatly improve the quality of upper flue-cured tobacco leaves, and in the study, T3 (dry bulb temperature 42 - 47 ℃ , fan speed was 1 440 r · min^-1 ; 47 -60 ℃ , 960 r · min^-1 ,60 -68 ℃, 720 r· min^-1 ) treatment obviously improved the appearance quality, chemical components harmony and the smoking quality, and significantly increased the content of most of the aroma components. Upper leaves from T3 had the characteristics of preferable note, adequate aroma amount, clean aroma quality, little irritation, moderate density and strength, less offensive taste and good taste. To a certain degree, T3 treatment improved the availability of upper leaves.
