摘要
本研究根据蜜菠萝的桶状外形、松软果肉组织及内部多纤维等特点,在国内首先研制出一种5mm以下薄片切片方法,为生产优质脱水菠萝片提供了保证。本文介绍了对所研制的切片机进行的试验,分析了输送过程中菠萝发生翻滚以及果肉纤维缠绕刀刃等问题及其解决办法。
According to the characters of Queen Pineapple, such as barrel shape, soft flesh texture and multi-fiber, etc.,a feasible method of cutting thinner slice below 5mm thick is studied to assure the high quality of dehydrated pineapple slice. In tests the developed slicer was introduced. In general, the pineapple are likely damaged in transportation, and the fiber tissues of pineapple flesh bind the knife edge in cutting. Methods of solving these problems were discussed.
