普洱茶水浸出物对DPPH·清除能力的研究 被引量:1

摘要 采用清除有机自由基1,1-二苯基苦基苯肼(DPPH.)能力的方法评价了不同陈化年代的普洱茶水浸出物的抗氧化活性。结果表明,普洱茶水浸出物的DPPH.清除率随陈化程度增加而降低,随茶多酚含量的降低而减少,且不同陈化年代的普洱茶水浸出物具有不同的DPPH.清除率,DPPH.清除率可以作为鉴定普洱茶的发酵程度和陈化年限的重要依据。 The antioxidative activity of Pu-erh tea with different age water infusion were evaluated by their capacity of scavenging 1,1-diphenyl-2-picrylhydrazyl(DPPH·) free radical.The results showed that the antioxidative activity of Pu-erh tea infusion decreased with the increase of aging extent;The free radical scavenging ratio decreased with the decreasing of the tea polyphenol content;The free radical scavenging ratio of Pu-erh tea infusion differed as storage durations differed,thus the free radical scavenging ratio of Pu-erh tea infusion could be used as an important index for determinating storage time and fermentation extent Pu-erh tea.
