摘要
用原子吸收光谱法对山东大学区酿造厂生产的市售调味品,随机采集13 个品牌进行Ca、Fe、Zn 含量的测定。结果表明:Ca 在12—30μg/ml 浓度范围,Fe 在2—10μg/ml 浓度范围,Zn 在1 —4μg/ml 浓度范围内呈线性关系。Fe、Zn 在食醋中的含量明显优于酱油,Ca 在食醋中与酱油中的含量无显著差异。
The contents of Ca,Fe and Zn in 13 kinds of flavourings randomly sampled from Jinan Brewery were determined by atomic absorption spectrophotometry.The handling technique and determing conditions were established. Linear ranges of concentration of Ca,Fe and Zn were 12-30,2-10,1-4μg·ml-l respectively. The results showed that the contents of Fe and Zn in vinegar are higher than that in sauce,and the content of Ca in the former is nearly the same as in the later.
