摘要
黄水是固态白酒发酵过程中形成的代谢产物。它含有大量的醇、醛、酯类等香味成分,是白酒风味的前体物质。应用黄水调酒液作为浓香型白酒的调香调味使用试验结果表明,应用黄水调酒液可以增大浓香型白酒的放香程度和酒体的绵甜爽净感,使酒体瞬间发生变化,保持了白酒固有的风格和个性,提高了浓香型白酒的优质品率,实现良好的经济和社会效益。
Yellow wateris metabo lism pronunciation which becomes in solid Chinese spirits fermentation,it coutains a large mumber of fragrance composition such as alcohol,aldehyde and ester,which is precursor substance of Chinese spirits.Theresults of test a bout yellow water as perfumery and flawor in strong aromatic Chinese spirits,show that Yellow water to wine can increase perfume and fleeing of sweet and pare of strong aromatic Chinese spirits,which makes wine take place in a flash,keeps the style and character of Chinese spirits,raises the Quality product rate of strong aromatic Chinese spirits and a chieves economic and social benefits.
