摘要
为给葡萄的采后保鲜提供理论与技术依据,以2g/kg、4g/kg、8g/kg不同浓度脱氧保鲜剂处理夏黑葡萄,置于温度(1±1)℃、相对湿度80%~85%冷库中贮藏,研究脱氧保鲜剂对夏黑葡萄采后的贮藏品质与生理生化变化规律的影响。结果表明,采用4g/kg脱氧保鲜剂处理夏黑葡萄,能显著抑制可溶性固形物、可滴定酸、MDA含量、果皮果肉花色苷、总酚含量及褐变度的下降,延缓葡萄的成熟与衰亡进程,且与其它组差异显著。
In order to provide the basis of theory and technique for postharvest fresh-keeping of grape,the effects of deoxidizer antistating agent on quality and physiological-biochemical change laws were researched,taking Xiahei grape cultivar as materials treated by deoxidizer antistating agent of 2,4,8 g/kg and stored at(1±1)℃ and relatively humidity of 80%-85%.The results showed that it could alleviate the decline of soluble solids,ascorbic acid and MDA content,control brouning degree effectively and lighten the consumption of anthocyanin and total phenol,by using deoxidizer antistating agent of 4 g/kg.Therefore it could significantly delay the maturing and aging of fruit.
