碱法提取茅台酒糟中水溶性膳食纤维的工艺研究 被引量:13

摘要 以茅台酱香型酒糟为原料,通过单因素试验和正交试验探讨碱法提取酒糟中水溶性膳食纤维的最佳工艺条件,即料水比1∶17,加碱量0.9%,提取时间70min,提取温度80℃,水溶性膳食纤维得率为23.6%,颜色为焦糖色粉末。 Moutai vinasse was used as raw materials to conduct alkaline extraction of water-soluble dietary fiber(SDF). The optimum extraction conditions were obtained by single-factor and orthogonal experiments based on the extraction rate. The results indicated that the optimal extraction param- eters for SDF were as follows: material-liquid ratio of 1:17, alkaline dosage 0.8%, extraction time 70min and extraction temperature 80℃. Under these optimal conditions, the extraction rate of SDF was up to 23.6%, and the obtained SDF powder was caramel colour.
