摘要
采用高效液相色谱(HPLC)法对大米香精产品的成分进行初步分析,按保留时间定性确定大米香精产品的主要香精物质。结果表明,大米香精产品的主要香精成分为2-乙酰基吡啶、2-丙酰基吡啶、2-乙酰基吡嗪、香草醛、乙基香兰素等几种常用香精物质,不同品牌的大米香精产品具有不同的香精物质组成。
A preliminary analysis based on liquid chromatography had been developed for rice flavor of the Components of the product,identified by retention time characterized the main flavors of rice flavor products.The results showed that the main components of rice flavors products were several common flavor substances of 2-acetyl pyridine,2-propionyl-pyridine,2-acetyl pyrazine,vanillin,ethyl vanillin and so on.different brands of rice products with different flavors and flavor composition of the material.
