花生米整粒脱脂技术研究

摘要 对花生米整粒脱脂技术进行了研究。采用物理压榨和膨化复形等工艺,将花生米与填充料花生粕一起置入立式液压榨油机内,在压力20~25 MPa下保持1 h,榨完油后将压扁的花生米膨化恢复形状,即得整粒脱脂花生米。花生米的破损率为零,复形度109%,复形后的花生米含粗脂肪13.89%(湿基),粗蛋白50%(N×6.25,干基)。 The defatting technology of whole peanut kernel using the process of physical press and recove- ring shape with expansion was studied. The peanut kernel and peanut meal were stuffed into oil cylinder of a vertical hydraulic oil press and pressed under the pressure 20 - 25 MPa and 1 h retention time conditions. The squished peanut kernel was treated to recover shape with expander to get the defatted whole peanut. The percentage of peanut granular contained damage was zero and the degree of recovering shape was 109%. The recovered 13.89% crude fat (wet basis) and 50% crude protein( N×6.25, dry basis).
