摘要
本文初步建立了针对小麦新陈度的定性检验方法。根据小麦在储藏过程中过氧化物酶含量和脂肪酸值等谷物内部理化指标的变化,利用试剂与小麦发生颜色反应来判断其新陈度。方法简便、实用、直观、快捷。
The qualitative method of wheat freshness degree are set up in the thesis.By examining the variation of interior index such as peroxidase、fat acid value and so on in wheat and using color variation of peroxidase and acidic indicator to judge cereal freshness,also by using peroxidase indicator to examine the mixed ratio.The method is convenient,practical and fast.
