摘要
我国的辣椒深加工近年来发展十分迅速,但是无论从规模上、技术上及下游产品的开发上,均与国外同行存在一定差距。本文详细介绍了辣椒红色素、辣椒精、辣椒碱类化合物的生产、研究及应用现状,并就目前存在的问题和市场情况进行了分析。
Chinese deep processing industry of pepper has been developing rapidly in recent years.
