摘要
乳蛋白质是牛奶中的主要成分,其含量和品质直接决定牛乳和乳粉的营养价值和质量。目前分析乳蛋白的方法较多,简要介绍了反相高效液相色谱、毛细管电泳及双向凝胶电泳技术的分离原理,并综述了其在乳蛋白质的分离、掺假及遗传变异体分析检测研究中的应用。
The content and quality of milk protein directly determine the nutritional value and quality of milk and milk powder.At present there are many ways analyzing milk protein.The separation principles of RP-HPLC,capillary electrophoresis and 2-dimension electrophoresis are briefly introduced and the application of them in separation of proteins in milk,adulteration and genetic variants were reviewed in this paper.
