摘要
本文对水溶剂法合成蔗糖单硬脂酸酯工艺进行了系统的研究，找出最适宜的反应条件为：蔗糖与硬脂酸单甘酯ｍｏｌ比为１：１、乳化剂用量５％、催化剂用量１％、水含量５％、反应温度１５０℃、反应时间２．５小时、压力０．０７～０．１４Ｐａ。重量产率１０６％（以硬脂酸单甘酯计）。
The optimalcondition of synthesozing monostearic sucrose ester by using water solvent is: sucrose:fatty acid glyceride = 1:1 (mole Ratio); emukdifyimg agent 5%,catalyst 1%,water 5%; reactiontime 2 5h, temperature 150℃,vacuum 0 07～0 14Pa After reaction,106% product is obtained(based on the weight of fatty acid glyceride)
