新资源食品原料植物甾醇和植物甾醇酯的安全与应用

摘要 植物甾醇天然存在于种子、豆类和植物中,安全性的研究未发现植物甾醇及植物甾醇酯具有明显的毒性和副作用,对血细胞和生化指标也未发现明显影响。美国、欧盟建议当某含量适宜可声称降低胆固醇作用。中国卫生部、欧盟、美国FDA推荐的植物甾醇摄入量为2.4~3.0g/d。目前,植物甾醇及植物甾醇酯在多种食品中应用呈现不断增加的应用趋势。 Phytosterols,also called plant sterols,are natural components of oil seeds,legumes,and grains.Many toxicological and safety studies did not find that phytosterols or its esters have any significant toxicity,influences on blood cells and biochemical parameters,and adverse effects.The suggested ADI(Acceptable Daily Intake) dosage of phytosterol(s) is 130 mg/kg body weight per day,or 9.1 g/day for a person with 70 kg weight.However,Ministry of health of China,Commission of the European Communities,and US Food and Drug Administration proposed using 2.4-3 g/day as daily phytosterol intake level.Additionally,dietary application of phytosterols and phytosterol esters keep increasing in many food types.
