摘要
橡子作为秦巴山区一种丰富的野生资源,具有巨大的食用价值。采用分光光度法、火焰原子吸收法和抗氧化测定法对陕南三地区野生橡仁的总黄酮、微量元素及抗氧化能力进行了综合分析。结果表明,陕南三地区所产橡仁含有较高的黄酮类化合物,其总黄酮含量分别为1.46%、1.18%和1.25%,含有比普通粮食含量更高的Mg、Ca、Fe、Zn、Cu等元素,橡仁提取物抗氧化能力介于L-抗坏血酸与BHA之间。
The acorn,an abundant wild resource in Qinling-Bashan(Qin-Ba) mountain area,has great value in functional food.The contents and the antioxidant capacities of total flavonoids and five trace elements in wild acorns collected from three regions of southern Shanxi province has analyzed by using spectrophotometry,flame atomic absorption spectrometry and antioxidant determination method.The results showed that the acorns,which were collected from three regions of southern Shanxi province,contained higher content of total flavonoids with 1.46%,1.18% and 1.25% respectively;the contents of Mg,Ca,Fe,Zn and Cu in the acorns were higher than that in normal food;the antioxidant capacity of the acorn extracts was located between L-ascorbic acid and BHA.The flavonoids,the trace elements and the antioxidant effects are the functional ingredients of functional food.
