论述了开发小麦专用粉的必要性,讨论了原料小麦的质量、设备和工艺的先进性及面粉的后处理等几个生产专用粉的基本条件,介绍了如何合理使用添加剂,指出在专用粉生产中要建立品质控制的新概念,确保专用粉质量的稳定。
The necessity for development of tailored wheat flour was elaborated.The quality of wheat as raw material,the advance of technology and equipment as well as posttreatment of flour were discussed.The rational use of additives was introduced.It was pointed out that a new concept of quality control should be estalished during production of tailored flour,so as to ensure a stable quality of tailored flour.
