摘要
对小黄花鱼头及鱼肉中脂肪酸的组成和含量进行分析测定.采用Bligh-Dyer提取法对样品中的脂肪油进行提取后,进行甲酯化处理,利用气相色谱-质谱联用仪对其脂肪酸的组成和含量进行分析测定.结果表明,从小黄花鱼头和鱼肉中分别鉴定出17种和16种脂肪酸,不饱和脂肪酸含量分别为66.60%和68.12%.
The components and the relative contents of the fatty acid of Small Yellow Croaker head and meat are analyzed.The fat is extracted by Bligh-Dyer method and esterified by sodium hydroxide-methanol,the fatty acids are separated and identified by gas chromatography-mass spectrometry.The results shows that 17 fatty acids and 16 fatty acids are identified in Small Yellow Croaker head and meat respectively.The unsaturated fatty acids account for 66.60% and 68.12% respectively.
