摘要
对明胶的结构、性质、明胶微胶囊的性质与制备特点进行了简要的阐述,并对明胶微胶囊在食品、功能材料、医药、农业和制革行业的应用现状及发展趋势进行了探讨。
The structure and properties of the gelatin and gelatin microcapsules were introduced.The application of gelatin microcapsules in food industry,function materials,medicine,agriculture,as well as tanning industry was analyzed and the development trend was put forward.
