摘要
采用1,1-二苯基-2-苦味酰基(DPPH)法、硫代巴比妥酸(TBA)法和三价铁离子(Fe3+)还原法,研究了马齿苋酚类提取物的抗氧化活性。结果显示,马齿苋中酚类物质具有较强的抗氧化活性,其清除DPPH自由基和对Fe3+还原能力明显高于人工合成抗氧化剂二丁基羟基甲苯(BHT),但其抗脂质过氧化能力却低于BHT。由于具有较好的抗氧化性,马齿苋酚类提取物有望作为一种天然抗氧化剂用于多种食品的加工中。
The antioxidant activity of phenolic extracts from Portulaca oleraceal was studied by 1,1-diphenyl-2-pirylhydrazyl(DPPH),thiobarbituric acid(TBA) and ferric reducing methods.The results showed that the extracts possessed much higher activities of scavenging DPPH radicals and reducing Fe3+ but lower inhibitory effect on lipoperoxidation than dibutyl-hydroxytoluene(BHT).As the extracts exhibited a strong antioxidant activity,it may be applied in food processing as a natural antioxidant.
