翅果油树叶片多糖抗氧化活性研究 被引量:9

摘要 目的从翅果油树叶片中提取多糖,并分析其体外抗氧化活性。方法采用热水浸提-乙醇沉淀法制备翅果油树多糖,采用碘量法测定各级多糖对猪油抗氧化性能的影响,用邻苯三酚自氧化法、番红花红光度法测定各级多糖对超氧阴离子、羟基自由基的抑制作用。结果多糖的总提取率为0.897%,其中乙醇的体积为提取液的1倍时,所得多糖的产量最大,为0.524%。各级多糖对动物油脂过氧化的抑制活性相当;乙醇用量为提取液的3倍时,所得多糖对羟基自由基清除率最大,为77.55%;乙醇用量为提取液的6倍时,对超氧阴离子的清除率达最大,所得多糖为34.54%。结论翅果油树叶片各级多糖均能有较地清除自由基,并且各级多糖对动物油脂的过氧化有较强的抑制作用,从而提高油脂的稳定性。 Objective To extract the polysaccharide from the Laminae of Elaeagnus mollis Diels and analyze its antioxidant activity.Methods Elacagnus mollis Diels polysacharide(EDPs) was extracted with hot water as extractait and precipiated by ethanol.The antioxidant activites of EDPs were tested with respect to some parameters,such as the antioxidantive stability to lard,the scavenging ability on hydroxyl radical and superoxide anion.Results When the quantity of alcohol was equal to the volume of EDPs filtrate,yield of EDPs was the highest(0.542%) and the total yield of EDPs was up to 0.897%.The antioxidant activity of the EDPs to lard was almost the same.When the quantity of alcohol was 3 times the volume of EDPs filtrate,the elimnination rate of the production to·OH could reach to the highest vaule of 77.55%.When the quantity of alcohol was 6 times the volume of EDPs filtrate,the elimination rate of the production to O2-·could reach to the highest value of 34.54%.Conclusion The EDPs has the effect of seavenging radical.It has a remarkable antioxidant effect on the lard and can effectively delay the reaction of oxidation.
