微乳体系中番茄红素的稳定性研究 被引量:3

摘要 目的研制番茄红素微乳并进行初步的稳定性评价。方法通过滴定法绘制伪三元相图,筛选微乳处方;采用紫外分光光度法,通过含量的变化考察温度、光线对番茄红素微乳液的影响。结果用番茄红素标准品制备标准曲线,在波长472nm处测定番茄红素含量,回收率为99.09%±2.0%。结论番茄红素在微乳液和油酸溶液中对光和热都比较敏感,但在微乳液中较稳定。
