饮食中亚硝酸盐摄入量的研究 被引量:3

摘要 在自然界广泛存在着硝酸盐,水和食物中也都有一定数量的硝酸盐,在细菌代谢作用下可将硝酸盐还原为亚硝酸盐。亚硝酸盐进入人体后和蛋白质形成致癌物质亚硝胺类,经检测6种主要食物的亚硝酸盐含量,结果为:鱼肉制品最高(8.28mg/kg),腌菜类较高(3.52mg/kg)。鱼肉制品中香肠含量(12.5mg/kg),肉制品(6.00mg/kg),鱼制品(3.50mg/kg)。由此估计,每人每日摄入亚硝酸盐要超过标准,因此要改变现代饮食结构,减少亚硝酸盐摄入量,尤其要控制鱼肉制品的有效时间或改变发色剂的种类,加强对亚硝酸盐的监督监测。
