摘要
对绿茶中茶红色素的提取工艺条件进行了研究筛选,采用正交方法,通过对反应体系的pH值、氧化温度和反应时间三个因素进行正交试验分析,确定了适宜的茶红色素提取工艺。结果表明:氧化温度55℃,pH 9.0,反应时间3h条件下的产物效果较好。
The extraction conditions of tea red pigment from green tea was studied by orthogonal test in this paper.The factors such as the reaction system pH,oxidation temperature and reaction time were studied to optimizing extraction process.The results showed that the products are better with oxidation temperature 55 ℃,pH 9.0,reaction time 3h products.
