摘要
三聚氰胺是一种重要的化工原料,添加到食品中会严重威胁人们的身体健康。在参阅大量文献的基础上,从重量法、电位滴定法、高效液相色谱法、气相色谱-质谱联用法、液相色谱-质谱联用法、毛细管电泳法、近红外线吸收法、比色法、免疫学法对食品中三聚氰胺的检测方法进行了综述,并对其今后研究方向做出了展望,建立对乳制品高效、快速的初筛选方法;开发研究具有更低检出限、更高灵敏度的仪器分析方法。
Melamine is an important chemical raw materials,however,it will be a serious threat to human health if it was added to food.Based on vast conferences,this paper summarizes analysis methods for determining melamine in food,in-cluding gravimtric analysis,potentiometr titration,high performance liquid chromatography,gas chromatography-mass spec-trometric,liquid chromatography-mass spectrometry,Capillary electrophoresis,near-infrared absord,colorimetry and Im-munological technology.It is concluded that some rapid and selective early screening technique of dairy should be devel-oped,and analysis of instruments with lower detection limit and higher sensitivity should be studied.
