摘要
将食品供应链看成由农产品供应源头→食品加工→经营/消费三个环节构成,建立了从农田到餐桌的食品供应链范围的食品安全风险评价指标体系;将层次分析法与模糊综合评价方法结合进行风险评价,即先应用层次分析法对各指标权重进行分配,再对评价指标信息进行模糊处理,最后应用模糊综合运算进行结果评价。以我国近几年的相关统计信息为依据,对从农田到餐桌范围的食品安全风险进行了评价,评价结果与我国实际相吻合。
Food supply chain(FSC) is consist of three main processes,which are agri-product supply,food production and management/catering.Indicators for risk evaluation of food safety were set up based on FSC from farm to table.The Fuzzy-AHP method was used to evaluate risk of food safety.Indicators' weights were calculated by AHP at first,and the indicators' information was processed by fuzzy theory,and then,food safety risk was evaluated by fuzzy method.Finally,food safety risk in our country was evaluated using the statistics related to food safety.The conclusion was similar with the fact in our country.
