摘要
芝麻香油以其风味独特而浓郁,色泽清纯而深受消费者喜爱,正是由于芝麻香油具有较高的经济价值,因此,芝麻香油掺伪现象历来就存在。本文主要介绍了芝麻香油掺伪检测技术,感官检测,理化检测,仪器检测。着重介绍了近红外分析技术(NIR)在油脂掺伪鉴别上的优势。
Fragrant sesame oil for its unique and rich flavor, color and pure and very popular among consumers, because of fragrant sesame oil has a high economic value, the phenomenon of fragrant sesame oil adulteration has always existed. This paper introduced techniques of detecting adulterated fragrant sesame oil, sensory evaluation, chemical and physical test, the instrument. Mainly introduces near infrared technology (NIR) in grease adulteration of identification.
