摘要
以禽蛋大宗产品——蛋清蛋白粉为实验原料,选用碱性蛋白酶为主要酶系,以还原力大小作为衡量指标,在底物浓度、加酶量[E/S]、pH值、温度、水解时间单因素分析的基础上,利用响应面设计方法构建碱性蛋白酶可控酶解制备高还原性能蛋清肽的三元二次回归模型,优化出的最佳酶解工艺参数为底物浓度5.16%,[E/S]2.37%,pH10.66,能够为深入开展禽蛋产品中高附加值天然产物高效提取、制备与产品开发提供了一种可行的思路。
Egg white powder,one of the main egg products,was hydrolyzed by alcalase with the method of pH-stat measuring the degree of hydrolysis(DH).All the hydrolysates were assayed by determination of re-ducing power ability.Under the consideration of five signal factors including egg white solution,the mount of enzyme(E/S),pH value,temperature and time,the response surface methodology was designed with help of design-export software to work out the optimum conditions.This study demonstrated that enzymatic egg white hydrolysates can act as a hydrogen donor.The results showed the following optimum parameters of hydrolysis conditions:concentration of egg white solution 5.16%,[E/S]2.37%,pH10.66.
