摘要
采用实验和理论相结合的方法,对番茄真空冷冻干燥工艺进行了探讨。认为番茄冻干过程为传热控制,建立了辐射边界的准稳态模型,利用该模型可以较准确的预测升华干燥的时间。通过在小型实验冻干机上的实验研究及工艺分析,给出了番茄真空冷冻干燥比较合理的工艺流程和冻干曲线。
The heat and mass transfer occured in the freeze drying processes of tomatoes were experimentally and theoretically investigated. The freeze drying model on the basis of heat transfer processes for tomatoes subject to radiation boundary conditions was founded to predict the time of sublimation dehydration. On the analysis of experimental conditions and corresponding results, optimun technological flow and freeze drying curve of tomatoes were proposed. And experiments further showed and verified that the model is reasonable and practicable.
