摘要
为开辟大米防霉保鲜新途径,提高大米储藏技术水平,进行了电子加速器辐照大米防霉室内试验。将水分为14.5%和15.98%的大米样品分别装入塑料袋内,密封后置于电子加速器下处理,辐照剂量分别为2.4×105rad(样品传动速度为7.0m/min)、3.5×105rad(样品传动速度为4.8m/min)和5.0×105rad(样品传动速度为3.4m/min)。将辐照后及对照大米样品置于30℃温度下储藏,并不定期取样进行微生物带菌量、菌相以及大米主要品质指标的检测。试验结果表明:水分为14.50%的大米在30℃温度条件下安全储藏一年时间,采用能量E=1.8Mer、剂量为2.4×105rad的辐照处理为宜,且对大米品质影响不大。辐照剂量超过5.0×105rad,防霉效果虽得到提高,但大米褐变程度会加重。
A laboratorial experiment of controlling mould by electron-accelerator irradiation for rice storage has been carried out.Rice samples with moisture contents of 14.5% and 15.98% respectively were enclosed in plastic pouches.Irradiation treatments were done with the following doses:2.4×10 5 rad (sample moving speed 7.0m/min);and 3.5×10 5 rad (sample moving speed 3.4m/min).The irradiated samples were stored at 30℃.During storage the samples were unperiodically detected for total amount of microspore,mycroflora and rice quality.The experimental results showed that an irradiation with E=1.8Mer and dose of 2.4×10 5 rad kept the stored rice from mould for 1 year,and that an irradiation with dose of over 5.0×10 5 rad promoted rice browning.
