一株产凝乳酶细菌的分离与鉴定 被引量:9

摘要 利用酪蛋白和麸皮培养基从奶牛场土壤中分离出高凝乳活力,低蛋白水解力的细菌。获得22株产凝乳酶细菌,其中菌株BB-23产凝乳酶活力高而蛋白水解活力低,经形态观察、生理生化和16S rRNA鉴定为枯草芽孢杆菌(Bacillus subtilis),该菌株在麸皮培养基发酵72h后产凝乳酶活力达73.80SU/mL,蛋白水解力为16.01U。 Twenty-two chymosin-producing bacteria with the higher curd and low-protein hydrolysis were obtained from the soil of Ynnnan dairy farms by casein and wheat bran medium. These strains were identified by morphological features, physiological and biochemical test, and 16 S rRNA sequences analysis. The strsain BB-23 showed the high capacity of producing chymosin and preliminarily identified as Bacillus subtilis. The rennet activity and proteolytic activity of strain BB-23 were 73.80 SU and 16.01 U after 96 h fermentation, respectively. The strain BB-23 could be used as an efficient bacterium for producing chymosin in cheese production.
