摘要
[目的]研究仲丁胺保鲜剂处理对葡萄营养指标的影响。[方法]用仲丁胺粉剂对葡萄进行装袋处理,以不添加保鲜剂为对照,逐日测定葡萄的感官指标、生化指标和理化指标。[结果]经仲丁胺保鲜剂处理的葡萄,其货架期延长了8d,可溶性固形物、可滴定酸的含量变化范围均在3%以下,基本接近于新鲜果蔬。[结论]仲丁胺保鲜剂可用于葡萄保鲜。
[Objective] The effect of the Treatment of the fresh-keeping agent(sec-butylamine) on the nutrition indicator of grape was studied. [Method] The grape packaged inside bag was treated with the powder of sec-butylamine and the CK,with nothing. And the sensory,biochemical and physical/chemical indicators of grapes were measured daily. [Results] The shelf life of the grapes treated with the preservative could be extended for 8 days and the variation range in the content of soluble solid and titratable acid was below 3%,which was basically close to those of fresh fruit and vegetable. [Conclusion] The sec-butylamine preservative can be used for the grapes’ fresh-keeping.
