施氮量对不同品种小麦籽粒蛋白组分和加工品质的影响 被引量:21

Effects of Nitrogen Application Amount on Protein Components in Grain of Different Varieties Wheat

摘要 在较高土壤肥力条件下,以两个强筋小麦品种临优145和郑麦9023,两个弱筋小麦品种宁麦9号和宝丰949为材料,研究了施氮量对冬小麦籽粒蛋白质含量、蛋白组分含量和比例以及加工品质的影响。结果表明,增施氮肥有利于提高籽粒蛋白质及其各组分的含量。总蛋白质、球蛋白、醇溶蛋白和谷蛋白含量均随着施氮量的增加显著提高,清蛋白含量也随施氮量的增加而提高,但不同施氮水平下差异不显著。氮肥施用量对小麦籽粒各组分在总蛋白中所占比例的影响不大,各蛋白组分在籽粒总蛋白中所占比例相对稳定。增施氮肥能够提高面粉的沉降值、湿面筋含量,面包体积和面包评分,降低小麦籽粒的容重。沉降值、湿面筋含量、吸水率、面包体积和面包评分与谷蛋白含量均呈极显著正相关。 Under the condition of higher soil fertility, effects of nitrogen application amount on protein content, its components content, percentage of each component content to total protein content and processing quality were studied by using two strong-gluten wheat varieties ( Linyou145 and Zhengmai9023 ) and two weak-gluten wheat varieties ( Ningmai9 and Baofeng949 ). The results indicated that adding the amount of N-fertilizer could increased the contents of protein and its components. The contents of total protein, globulin,gliadin and glutenin all increased significantly with the amount of N-fertilizer added, but the effect of nitrogen application amount on albumin content was not remarkable. The effects of nitrogen application amount on the percentage of each protein component content to total protein content were not remarkable ,and the percentage of each protein component content to total protein content was relatively stable. Adding the amount of N-fertilizer increased sedimentation volue,wet gluten content,loaf volume and loaf value,and decreased test weight of grain.
