摘要
介绍了电子舌的组成和工作原理,着重阐述了其在饮料的种类区分、真伪辨别、质量分级和品质评价等领域的应用现状与发展趋势,并指出了这些信息新技术实现过程中所需要解决的问题。电子舌技术简单快速、成本低廉,作为一种新型的现代化智能感官仪器,能够对饮料生产过程进行监控,在饮料质量的评价中具有巨大潜力。
The configuration and basic principle of electronic tongue are introduced in this paper. The cur- rent research situation and applications of the electronic tongue in the different kinds of beverage discrimination, quality examination,fake products discrimination and quality evaluation were expounded. And the electronic tongue's further application and developing prospective in food industry was discussed. It is also given that the theoretical and technological problems which should be solved. The electronic tongue as a kind of modem intelli- gent sensory instrument was simple and rapid, and low in cost, and could monitor and control the period of bever- age production, which shows a great potential in the evaluation of quality for beverage.
