摘要
垫江白柚果实采后在自然通风库贮放60天时果皮POD出现活性高峰,之后下降,且处于较低水平,同时MDA含量及累积速率较快;果实枯水也在60天时开始出现,之后枯水程度逐渐加重。经冷激处理后果皮POD活性在贮藏中后期保持较高水平,果皮及果肉中MDA含量及累积速度较缓,果实枯水现象得到延缓。长寿沙田柚果皮POD活性远高于垫江白柚,均活性为垫江白柚2倍,其果皮及果肉中MDA含量低且累积速率慢,果实在贮期内未出现枯水现象。POD同工酶谱显现沙田柚在慢区具特有的1、4酶带,而垫江白柚在慢区及快区各具一条明显酶带,冷激没有改变原有酶谱,只是谱带强弱受到调节。
During natural storage of pummelo cv'Diangjiangyou', peroxidase (POD) activity in fruit peel reached a peak at day 60, then decreased and kept at lower level. Meanwhile, malonic aldehyde (MDA) content had a higher level and a faster accumulation rate (AR), granulation started at day 60 and became worse afterwards. After a cold shock treatment (CST), POD activity kept a higher level, MDA content had a lower level and slower AR, and granulation was delayed. ' Shatianyou' had higher level of POD activity, two times as 'Diangjiangyou', a lower level of MDA content with a slower AR, and none granulation. In term of POD isoenzyme, ' Shatianyou' had special # 1 and # 2 enzyme bands in slow field, while'Diangjiangyou'showed a obvious enzyme band both in fast and slow fields. CST did not changed the original enzyme pattern, only regulated its band intensity.
