摘要
以4种罗非鱼(尼罗、奥利亚、吉富、奥尼)为研究对象,通过氨基酸自动分析仪分析检测其体内氨基酸组分并对其营养价值进行了分析评价。结果表明:四种罗非鱼样品均检测出17种氨基酸,总量分别为842.91、808.49、828.33、867.28mg/g(干重比);其中7种人体必需氨基酸含量占氨基酸总量分别为42.79%、41.77%、42.71%、43.92%(盐酸水解法);4种鲜味氨基酸含量占氨基酸总量分别为37.64%、39.35%、37.82%、36.77%。必需氨基酸的含量及其占氨基酸总量的比例都高于FAO/WHO提出的标准。根据氨基酸评分(AAS)和化学评分(CS)标准,4种罗非鱼的第一限制因子均是甲硫氨酸和胱氨酸,第二限制因子均为缬氨酸。
In this paper, 4 kinds of Oreochromis sp. (Oreochromis nidoticus, Oreochromis aureus, Gift, O. niloticus ♀ ×O. aureus ♂) were used as experimental material. Amino acid of this 4 kinds of Oreochromis sp. were detected with automatic amino acid analyzer, and nutrition value was evaluated. The results indicated that there are 17 common amino acids in each samples, total content of amino acids are 842.91,808.49, 828.33, 867.28 mg/g (dry) ; and 7 essential amino acids can be found in muscle of these 4 kinds of Oreochromis sp. The content of essential amino acids are 42.79 %, 41.77 %, 42.71%, 43.92 %. By nutrition evaluation for the amino acids in muscle to human needs, the content of 4 kinds of delicious amino acids are 37.68 %, 39.51%, 38.00 % and 36.82 %. All the conclusion shows higher than the FAO/WHO. According to the amino acids score (AAS) and the basis of chemical score (CS), the first limited amino acid of the 4 kinds of Oreochromis sp. are Met and Cys and the second limited amino acid is Val.
