摘要
在低乙烯气调贮藏和模拟销售条件下对旭和元帅苹果品质下降的速率进行了研究。在2%O_2+3%CO_2+95%N_2的气调条件下贮藏0,2,4,6和8个月后分为5组,分别放在20℃,10℃或以12小时交替的0°和20℃下1~14天(旭)或1~20天(元帅)。结果表明,旭和元帅苹果的硬度、含酸量在气调贮藏期间逐渐下降,销售期间两者损失的速率在20℃下比在10℃下或以12小时交替于0°和20℃下的快一倍;贮藏和销售期间的可溶性固形物含量变化不大;气调贮藏时间对旭和元帅苹果在销售期间硬度下降速率的影响表现出不同的模式。
The rate of quality loss of′McIntosh′and′Delicious′apples (Malus domesticaBorkh.) during controlled atmosphere (CA) storage and simulated marketing period wasstudied.The harvested′McIntosh′and′Delicious′apples were stored under2%O_2+3%CO_2+95%N_2CA conditions for 0,2,4,6 and 8 months.After storage,theapples were divided into 5 groups and held at 20℃,10℃ or 0°(?)20℃ in 12-hour cyclefor 1~14 days(′McIntosh′)or 1~20 days (′Delicious′).The apple firmness,acidity andsoluble solids (S.S.) was then measured.The firmness and acidity of′McIntosh′and′De-licious' was gradually decreased in CA storage.Both cultivars lost their firmness andacidity at 20℃ more than twice faster than similar apples at 10℃ or at 0°(?)20℃alternatively during marketing period.The soluble solids did not change very much inCA and marketing.The different patterns of firmness loss affected by CA storage dura-tion for the two cultivars during marketing were reported.
