摘要
对商陆果实色素提取物进行光谱和耐酸碱性、耐光热性及耐氧化性试验。结果表明,该色素呈紫红色,吸收高峰为523nm,水溶性好,对碱、氧化剂不稳定,耐光性较差。但对酸、热稳定性高,可作为一种食用色素使用。
The properties of fruit pigment from Phytolacca acinosa are studied.The results show that the pigment is purplish red betacyanin pigment.Its absorptive peak is at 523 nm.Its water solution has highly thermal and acidstability.The pigment could be used as a natural edible pigment.
