摘要
测定了150份陕西省小麦育成品种重要加工品质指标:籽粒硬度、粗蛋白含量和全麦粉SDS-沉淀值,并根据该品质指标对供试品种的加工品质特性进行聚类分析。供试品种粗蛋白含量平均值为12.4%,变异系数8.9%,硬度与SDS-沉淀值变异较大,其平均值分别为46.1和45.2ml,变异系数分别为15.2%和23.4%。聚类分析结果,150个小麦品种被聚为Ⅵ大类。第Ⅱ类和第Ⅵ类品种3个加工品质指标综合平衡较好。第Ⅱ类包括10个品种,该类品种籽粒硬度大,粗蛋白含量高,沉淀值也高,其加工品质特性与面包小麦相似。第Ⅵ类有18个品种,其籽粒硬度小,粗蛋白含量低,沉淀值也低,其加工品质特性类似于饼干小麦。
The grain hardness, protein contents and wholemeal SDS sedimentation values of 150 improved wheat varieties in Shaanxi were measured and cluster analysis. The results showed that the mean value of protein content of these varieties was 12.4%, the variance coefficient was 9.0%. Hardness and sedimentation values varied greatly among these varieties and their variance coefficients were 15.0% and 24.5%, respectively. Cluster analysis divided these varieties into six clusters, the quality indexs of varieties in the second and sixth cluster were well balance. The second cluster included 10 varieties which had great hardness, high protein content and sedimentation values, their quality traits were similar to bread wheat. The sixth cluster included 18 varieties which had poor hardness and low protein content and sedimentation value, their quality traits were similar to biscuit wheat.
