米曲霉固态发酵豆粕生产大豆肽 被引量:6

Studies on Protease Production of Soybean Meal by Aspergillus Oryzaer Solid Fermentation

摘要 采用米曲霉A-9005固态发酵豆粕,研究所产蛋白酶的活力。结果表明其较优工艺为:发酵原料中豆粕含量为87%,初始pH值6.4,发酵温度为33℃,发酵时间为102 h,测得蛋白酶活为1 789.47 U/g。试验为米曲霉固态发酵豆粕产大豆肽的研究提供了相应的工艺参数和一定的理论依据。 The methods of solid production of protease which was fermented by Aspergillus Oryzaer with soybean meal were studies. Results show that the oriental conditions is that content of defatted soybean in fermentation stuff 87%, initial pH 6.4, temperature 33 ℃, fermentation period 102 h. The protease activity is 1 789.47 U/ g. The results could be used as technical pa-rameters and theoretic basis for the production of soybean peptides with A.oryzaer on soybean meal ,which were helpful for increasing the pro-duction rate of soybean peptides.
