小茴香甲醇提取物的抗氧化性质研究 被引量:28

摘要 采用不同的有机溶剂从小茴香(FoeniculumvulgareMiler)种子中提取抗氧化物质。以甲醇提取物(MEFS)具有较高的产率及较强的抗氧化活性。MEFS的抗氧化活性与BHA相当。但与BHA相比,MEFS具有较强的耐热性,在185℃处理2h,MEFS仍有87%的残留抗氧化活性,在4℃保存一年抗氧化活性无明显下降。MEFS与抗坏血酸,柠檬酸及半胱氨酸无协同效应。1.0%(W/W)的MEFS防止猪油酸败的效果与0.2%的BHA相同。采用制备TLC从小茴香的甲醇提取物中纯化出12种组分,其中Rf值为0.41及0.49的两种组分表现出很强的抗氧化活性,优于BHA。 Methanol extracts of fennel(Forenicum vuigare) seeds(MEFS)produced a higher yield of a component having stronger antioxidant activity then other organic solvents.The antioxidant activity of MEFS was equal to butylated hydroxyanisole(BHA).MEFS had batter thermal stability than BHA and showed an 57% inhibition of peroxidation of linoleic acid when heated at 185℃ for 2h.Only a slight decrease in antioxidative activity of MEFS occurred when the extract was stored at 4℃ for 1 year. Antioxidative activity of MEFS deceased with an increase of pH from 3 to 9.No synergistic effect of ascorbic acid,citric acid,cysteine was observed on the inhibitory effect of MEFS.MEFS also showed good inhibitory activity in lard oxidation when compared with BHA.The MEFS was separated into 12 fractions by TLC,in which the strongest antioxidant activity was found in subfractions with Rfs of 0.41 and 0.49 at 87% and 95% inhibition of peroxidation of linoleic acid.
