摘要
选用69个不同来源及不同类别的冬小麦品种,就其13个品质性状进行了研究。结果表明,河北省农家品种的面粉沉降值、湿面筋含量、面团吸水率、形成时间、稳定时间、断裂时间、带宽和评价值等性状均优于河北育成品种;国内其它省份有成品种的沉降值、出粉率、白度、面团稳定时间、带宽分别优于河北省农家品种和育成品种,尤其是出粉率表现最为突出;就一些重要加工品质性状而论,如沉降值、形成时间、稳定时间和评价值等,国内育成品种均与国外优质品种存在不小差距。但国内育成品种中也存在着品质综合表现较好的材料,其中表现最好的是小惯6号和北京7号。相关分析表明,沉降值与湿面筋含量呈显著正相关,与面团形成时间、稳定时间、断裂时间和评价值存在极显著正相关关系,与公差指数和软化度呈极显著负相关,与其它性状的相关性均不显著。
In this paper, thirteen quality charaCters of 69 dst origin and type of winterwheat varieties were studied. The results indicated that landrace vforties of Hebei provincewere superior to the improved varieties of the province in flour botwh, wet gluten, wa-ter absorption, dough development time, stability, breakdown time, belt width and evaluaionvalue. The sedimentation, flour yield, whiteness, dough stability and belt width of the otherprovinces improved vdrieties were superior to both landraces and improved wheats of Hebei, es-Pecially in flour yield. As far as some important quality charaters (e. g. sedimentation valuedough development time, stability and evaluation value) were concerned, there was a greaterdifferene between China-bred varieties and the good accessions from the other countries-thelatter was always with good charaters. There were, however, some excellent varioties in theChina-bred wheats, such as Xiaoyan 6 and Beijing 7 being with the best performances in thecharacters above. Correlation analyses showed that there existed significantly positive relation-ship between sedimentation value and wet gluten, dough development time, stability, break-down time and evaluation value, and significantly negative the to mixing tolerance indexand degree of softening. But no significant relationships were found between sedimentation andthe other charaters.
